Avocado toast

So I’ve been eating these open faced sandwiches in the mornings, they are so good although they do lack some protein so if you are looking to have more protein in the morning maybe try adding some black beans or smashed chickpeas. It sounds weird but it’s like a chickpea salad sandwich. Of course if you enjoy tofu or tempeh you can just add that.

I have been using these Ciabatta Rolls we sell at Aldi. I like having a thicker bread, but I will probably switch to a healthier bread choice in the future.

So you’re just going to pop them in the toaster for a few minutes. Once they’re done just spread some salsa on top. I like spicy everything so I use medium salsa. Cut your avocado into slices and lay them on the salsa. And of course cut the tomatoes into thin slices and lay on top. For a little more flavor you can sprinkle pepper on top.

I realize this is just a simple and obvious recipe but honestly this is just so good, it’s super quick to make and filling. It can be a little messy so not for “on the go” purposes. Another thing you can try is hummus instead of salsa. There’s so many different things you can do with open faced sandwiches which is why I love them so much. Too much bread is frowned upon (unless you can get your hands on some real fresh bread) so I limit this to maybe twice a week.

You are in control!

One of my goals is to be able to wake up every day, at an early hour. When I have to work at 6am, 2-3 times a week, I get up at 5am. So why is it still so hard to get out of bed at even 7 or 8 in the morning on the other days of the week? Well we tend to think that by hitting snooze you are taking control. But if your goal is to get up because you have shit to do, then taking control of your body is getting out of bed and feeling motivated, even at the crack of dawn.

This is my alarm clock. And the list keeps going. I probably have an alarm for every 10 minutes lol. This is not okay. It is setting you up for failure because you know it’s there. So I’m going to delete them.

Why does is matter what time? Well because it does. It has been scientifically proven that your mind is working best in the early morning. And if you ever look at other people that you admire or maybe you’re jealous of them because they seem to have all of this time and get so much stuff done or that they do so much every day, and it’s like how do you possibly have time for that? Well we all have the same amount of time every day. It’s just a matter of what you choose to do with your time. So you can lay in bed for two more hours or you can get up and go for a jog to bring you a step closer to your goal. You can choose to scroll Facebook for an hour or you can pick up a book. Even watch a documentary. I promise you will feel better after.

For 3 straight days I have woken up at 5 to go to work and the next day I work at 1pm. The only other thing I get up for during the week is to get my daughter ready for school and put on the bus at 8:15. I have been in a bad habit of laying back down after and I’ll sleep until 10. It’s wasting my time, and fooling my body. So my first goal is to get up at 7, put Saylor on the bus and then DO something! Since it’s winter here right now and I am not a fan of the cold it’ll be indoors. But there’s so much that I can do to better myself just inside my house. Maybe I will workout or maybe I will read. Or maybe both! I’ll let you know next time!

It may seem silly to talk about something so minuscule, but every step counts. Every time you make a decision you are changing your future. I’m going to start with this small goal and eventually I’ll reach my biggest dreams.

I am the mother of two cuties. Saylor (age 4) and Sadie (9 months), and I wouldn’t trade it for the world. They might look adorable but they can be a handful. Have you ever noticed how terrible twos is really like from the time they start waking until who knows when? (Because I haven’t gotten that far yet) lol.

Yes here we are shopping at Aldi. I work there and it’s still my favorite grocery store. I’m an Assistant Store Manager as of January 1st and I am learning things everyday. I work full time and worked my way up even though I was out for maternity leave. My point is, you can do anything you put your mind to even with kids.

I really have all these goals and ideas that I want to do such as eating plant based, exercising, being more organized, saving money, reading more, getting up earlier, and etc etc the list goes on. So my thought is if I can put it on here to the public it will slowly become a reality and something we can help each other achieve.
